White Tuna (Thunnus alalunga), also known as longfin tuna, is the most prized of its kind for its texture and flavor. It has a long central fin up to two thirds of its size, which gives it the characteristic name of alalunga, or long fin. They are individually line-caught when they are at their best moment of maturity.


The time when a fish is in the best conditions of size and taste to be caught is known as the fishing season. The best time to fish for White Tuna is from July to October, caught with a rod or hook and line one at a time.
