Our Bonito del Norte in escabeche (vinegar) formula gives a subtle touch of personality to our products. Products with a mild flavor and a very tender texture combined with Conservas Ortiz’s traditional escabeche marinade. We recommend not throwing away the escabeche sauce, so it can be used as a dressing on White Tuna salads.
White Tuna (Thunnus alalunga), also known as longfin tuna, is the most prized fish for its texture and flavor. It has a long central fin up to two thirds of its size, which gives it the characteristic name of alalunga, or long fin.
We prepare our White Tuna – Bonito del Norte – in escabeche (vinegar) in a totally traditional way: individually line-caught during the fishing season, it is then carefully hand-prepared and packed in escabeche. The flavor is true to the traditional escabeche.
Once opened, in order to maintain all its flavor for up to five days, we recommend keeping the White Tuna in the refrigerator, preferably covered and totally submerged in its marinade.

In this case, we find it escabeche, so we add to the product the qualities of olive oil, vinegar, and salt.
If there was such a thing as the perfect tapa, gilda (skewers) would be one of the candidates. And if we add extra Bonito del Norte, all the more so. This delicacy has been with us for years, at bar counters during good times.
