50 g Mozzarella
Extra virgin olive oil
Salt
Parsley
About this recipe:
The best partner for a salad: We recommend pairing it with aged white wines, and for a perfect partnership, try a sparkling brut nature. The rule to bear in mind when pairing is for the wine to enhance the dish’s flavor and the dish to not mask the taste of the wine.
Wash and slice the ripe tomato and mozzarella cheese.
Place the tomato and the mozzarella alternately in a circle and place the Ortiz Anchovies on the tomato.
Sprinkle the chopped parsley to taste, add a little salt and a drizzle of extra virgin olive oil.

Umami is a Japanese word used to define what is known as the “fifth flavor,” in addition to the basic flavors of sweet, acidic, bitter and salty. It literally means delicious flavor since its origin is the union of umai, meaning “delicious” and mi, meaning “flavor.”
