White Tuna (Thunnus alalunga), also known as longfin tuna, is the most prized fish for its texture and flavor. It has a long central fin up to two thirds of its size, which gives it the characteristic name of alalunga, or long fin.
We select the best specimens from each fishing season to prepare them using traditional methods. Once packed in olive oil, we let them mature in the cellar until they reach their perfect maturity point. Each product is marked with its year of production.
Once opened, in order to maintain all its flavor for up to five days, we recommend keeping the White Tuna in the refrigerator, preferably covered and totally submerged in olive oil, adding more if necessary.

White Tuna in olive oil lovers are already practicing a good trick, namely storing this product in their own cellars. The idea is to store white tuna products in oil and let time do the rest. Contrary to what many believe, the products improve with time, so we can leave the fish in oil to mature in the containers for several years. And the same criterion can be applied to pilchards.
