The Ortiz Sardines, of the Sardina pilchardus variety, are cleaned by hand, one by one, and fried in olive oil. As with wine, it is possible to create a cellar of canned sardines as they improve in flavor and quality over time, becoming more mellow and delicate.

Sardines a la Antigua are elaborated through an artisanal process in which they are lightly fried in olive oil and carefully packed by hand, one by one.

We offer you a Sardine elaborated with extra virgin olive oil from organic farming.

Sardines in spicy sauce are prepared fresh, during the coastal season, and with the traditional ‘old-fashioned’ recipe. And now with an original sauce with tomato, gherkin, carrot, bell pepper, onion and cayenne pepper.

About the sardine

The European or common sardine (Sardina pilchardus) is one of the most popular blue fish consumed in canned form. It is a gregarious species, which moves in numerous schools and makes important movements throughout its life.

This oily fish is a marvel of the sea, since despite its small size, it contains an enormous amount of nutrients. It is rich in omega 3 fatty acids, phosphorus, selenium, iodine, magnesium and vitamins of the B, D and E groups.

The time when a fish is in the best conditions of size and flavor to be caught is known as coastal. Sardines are caught between August and November. A curiosity: it is preferably caught at dawn, which guarantees a better taste.

Respect for the fishing season is fundamental to ensure the future of the species. This way we guarantee their survival and we are certain that the fish that reaches our table is always the highest quality possible.

Sardines are caught using a technique known as purse seine fishing. It is an artisanal method of selective fishing, with no discards, 100% sustainable.

It happens to canned sardines as it happens to good wine, the years are good for them. A can of canned Sardines stored in ideal conditions can be more delicious than the first day even if we open it several years later. In some countries, such as France, the ‘Sardine cellar’ is practiced, storing canned sardines for years while they gain flavor, and they choose a good occasion to taste them.
