Ortiz White Tuna Tartare


1 can Ortiz White Tuna in olive oil
4 medium salad tomatoes
1 scallion
A few stalks of chives
4 tablespoons of olive oil
2 tablespoons of vinegar
Pepper
Salt
Tomato secrets: Dishes with raw, chopped tomatoes should be kept for the shortest possible time, as tomatoes soften very quickly and lose their characteristic texture. This is why it is advisable to chop and dress them just before serving.

Peel and chop the scallion and the chives. Peel the tomatoes, remove the seeds from inside and any liquid and dice. Mix with the chopped spring onion and chives.
2Whisk the oil with the vinegar and a pinch of salt and pepper and drizzle on the diced tomato.
3Place a layer of diced tomato at the base of four cooking rings. Top with a layer of Ortiz White Tuna flakes and cover with another layer of diced tomato. Finish off with tuna flakes, garnish with some chives, carefully remove the ring and serve.
