– 1 can Ortiz Mackerel Roe
– 2 ripe tomatoes
– 1 red onion
– Extra virgin olive oil
– Balsamic vinegar
– Salt


Wash the tomatoes and slice very finely. Cover the base of your serving dish with the tomato rounds. Cut the red onion into the finest slices you can. Cut each soft mackerel roe into two pieces. Then place a slice of onion on top of each slice of tomato and top with one of the pieces of roe. Dress with the vinaigrette. Dress the dish with extra virgin olive oil and balsamic vinegar to your taste.
